The holiday season is over, and it’s time to give our bodies a break. While it’s not always everyone’s favorite conversation topic, high-fiber food is a great way to get your digestion back to normal, and some studies have shown that a diet high in fiber is more important than cutting calories or fat for dropping those holiday pounds. Here are four of our very favorite recipes featuring high-fiber food for Meatless Monday.

Lentils are a great choice in the new year, and not just because they’re healthy and packed full of protein and fiber. Lentils are traditionally associated with money and are eaten around the world to encourage blossoming finances in the new year. In Italy, green lentils are eaten right after midnight, and lentil soup is also frequently eaten in Germany and Brazil in the new year. Many of these traditional dishes pair lentils with pork, but for a healthier and lighter version of this lucky dish with even more fiber, we love this lentil ragout with pumpkin. Spiced up with chili flakes, garlic, and fresh herbs, this stew is just as flavorful as it is healthy.

If you like the idea of a lentil soup but are looking for different flavors, this version might be more your jam. This lentil soup also includes black-eyed peas, which are traditionally eaten in the American south for New Year’s. The soup features everyone’s favorite detox ingredient — kale — as well as a host of flavorful spices like cumin, paprika, and chili flakes.
