Any favorable qualities in a particular crop may be regenerated by planting the heirloom seeds again. Heirloom tomatoes are non-hybrid and maintain a true breed through open-pollination.

Toast with Flaked Sea Salt, Basil, and Heirloom Tomatoes

Ingredients
1 baguette, gluten-free if necessary
4 heirloom tomatoes
1 bunch basil
Extra-virgin olive oil, for drizzling
Flaked sea salt
Ground black pepper

Directions
Slice baguette in half so it is open faced. Then cut each half into quarters. Toast until lightly golden and crispy.

Cut the stems off the tomatoes. Slice each tomato into thin rounds and set aside. Roll each basil leaf from the bottom up until rolled into a cylinder shape. Slice thin incisions vertically into the basil to form basil chiffonade.

Top each piece of toast with two slices of heirloom tomato and then garnish with basil. Drizzle lightly with extra-virgin olive oil then sprinkle with flaked sea salt and ground black pepper to taste. Enjoy!
